Ninefold rums are made from a sugarcane molasses base, fermented with yeast and nutrients, then double-distilled to a 90% ABV distillate. Over the course of a week the ABV is reduced slowly down, either to bottling or cask strength, in a gentle process which allows the rum to retain all its characteristics and flavours. Ninefold's Pure Single Rum and Dormont Spiced are bottled and labelled on site immediately, while their Cask Aged rums are allowed to rest in oak barrels until the time is right to bottle them.
